Sample Recipe

Gazpacho from Roberta Bernstein z"l

• 1 red pepper
• 1 peeled cucumber
• 1 can crushed tomatoes
• 1 t crushed garlic
• 4 T olive oil
• 4 T wine vinegar
• A few drops tabasco
• Salt, pepper & tiny bit of sugar

 In food processor, chop pepper and cucumber with blade.  Add rest of ingredients and mix.

Kosher Cooking & Jewish Terms

• Blintzes are thin pancakes filled with cheese & lightly fried.
• Borrekas, popular in Israel, are made from thin flaky dough (phyllo) and filled with salty cheese or potatoes. 
• Kamish Brodt is "almost bread" in Yiddish.  Kamish bread and mandelbrodt ("almond bread") are first cousins to biscotti.
• Kosher cooking entails not mixing milk and meat products when preparing or eating food.  Someone who "keeps kosher" is also diligent in only buying products which have been prepared by a company certified as kosher or eating in a kosher restaurant.
• Kugel is a casserole with either potatoes or wide noodles (lochshen).  
• Parve refers to a product which can be used for either a meat or dairy meal (e.g. Rich's whipping cream).
• Pavlova is a meringue dessert which is crispy on the outside & light and fluffy inside.
• Sambusak is a Middle Eastern fried or baked pasty, either half-moon shaped or triangular, filled with meat, vegetables, salty cheese, sweet cheeses or nuts.
• Shabbat, the Jewish Sabbath, is from sundown Friday until sundown Saturday.  Jewish families often have a special meal Friday night and Israelis often eat a festive lunch on Saturday.
• Tabouleh is a Middle Eastern salad with bulgur, parsley, mint, tomato, & scallions and seasoned with lemon juice and olive oil.
• Zechrono le'bracha (abbreviated asז"ל)--"of blessed memory"--is written following the name of a Jewish person who has died (also written in English as z"l).
